So many things to be grateful for on Mother’s Day…

The two sweet boys who made me a Mommy,

A clean car,

Mother’s Day Mango Salsa (recipe below),

Gifts that grow,

Island Salsa

Adapted from Colorado Collage Cookbook

2 large ripe tomatoes chopped
1 ripe mango, peeled, seeded, and chopped
2 kiwi fruits, peeled and chopped
1 each - chopped red, yellow and green bell pepper
¼ cup chopped red onion
1 tomatillo, husks removed and diced
1 jalapeno pepper, cored, seeded and diced.
2 T fresh lime juice
¼ cup chopped fresh cilantro
½ t ground cumin
Freshly ground black pepper.

Mix all ingredients and chill up to 8 hours. Serve with tortilla chips or as an accompaniment to fish or chicken.
